Why not try a warming beetroot stew


Ingredients (serves 4)

4 large cooked beetroot (boiled in skins, then peeled - but you can buy pre-cooked)

2 tins chopped tomatoes

1 chorizo sausage ring

1 large jar pickled gherkins (plus 4 tablespoons of the pickling vinegar)

1 large onion

4 cloves garlic

1 pint chicken stock

1 tablespoon smoked paprika

1 tablespoon sugar

Salt and pepper

Soured cream to serve


Chop and fry the onions and garlic until soft. Add the chorizo and soften for 2 minutes. Mix in the paprika.

Add the tomatoes and cooked for 5 minutes until softened and smooth.

Chop the beetroot and gherkins into chunks and add.

Add all the other ingredients and simmer for 5 minutes.

Serve with soured cream and crusty bread.
